Lemongrass Chicken and Vegetable Stir-Fry

Before you start, gather all your ingredients and ensure they are prepared. Cut the chicken, wash and chop the vegetables, and set aside the garlic and ginger. Make sure your pan or wok is ready for cooking. It's time to create a delicious stir-fry!
Ingredients:










Warm the Pan


Heat the olive oil in a large pan or wok over medium-high heat until shimmering (2 minutes) and prepare to add the chicken immediately after (2 minutes).
Cook the Chicken






Add diced chicken breast to the hot oil. Sauté until cooked through and lightly browned (7 minutes) while stirring occasionally (2 minutes).
Stir-Fry the Vegetables









Add chopped broccoli, bell pepper, carrot, minced garlic, and ginger to the pan. Stir-fry until vegetables are tender yet crisp (5 minutes) while continuing to stir (2 minutes).
Add Seasoning and Serve
Finally, add soy sauce and squeezed lemon for flavor. Mix well and remove from heat (2 minutes) while garnishing with fresh cilantro (1 minute). Include plating your dish (2 minutes).

Serve the stir-fry hot, garnished with fresh cilantro and lemon wedges. It pairs well with a side of rice or quinoa. Store leftovers in an airtight container in the fridge for up to 3 days and reheat before serving.
