Spicy Shrimp and Bok Choy Stir-fry

Gather all your ingredients: shrimp, bok choy, garlic, ginger, soy sauce, and sunflower oil. Ensure your cooking space is prepared, and your skillet is ready. This dish cooks quickly, so have all ingredients prepped before you start!
Ingredients:

Prep the Ingredients

Wash and chop the bok choy into bite-sized pieces. Mince the garlic and ginger finely. Gather the shrimp and ensure they are deveined and cleaned.
Cook the Shrimp and Veggies

In a skillet, heat the sunflower oil over medium-high heat. Add minced garlic and ginger, sauté until fragrant (30 seconds). Add the shrimp and cook until they turn pink (approximately 3 minutes). Then add the bok choy and stir-fry for an additional 2 minutes until it wilts.
Add Seasoning and Serve
Pour the soy sauce over the stir-fry, mix well and cook for another minute. Remove from heat and serve immediately.
Enjoy!
For a beautiful presentation, serve the stir-fry on a bright plate and garnish with sliced green onions or sesame seeds. This dish goes wonderfully with rice or noodles. Store any leftovers in an airtight container in the fridge for up to two days.
