Savory Eggplant and Spinach Tacos
Get ready! Dice your eggplant, chop your spinach, onions, and garlic. Heat olive oil in a pan over medium heat.

Sauté the Vegetables
In a pan, heat the olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant. Then add diced eggplant and stir well. Cook for about 8-10 minutes until the eggplant is tender.
Add Spinach
