Sweet Potato and Black Bean Hash
Prepare all your ingredients by peeling and dicing the sweet potato, chopping the onion, mincing the garlic, and rinsing the canned beans. Heat your skillet on medium heat before starting the cooking process.

Sauté the vegetables
Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic, cooking until the onion becomes translucent and fragrant.
Cook the sweet potatoes
Add the diced sweet potatoes to the skillet. Stir well and cover, allowing the sweetness to caramelize for about 10-12 minutes, stirring occasionally.
Add the beans
Once the sweet potatoes are tender, stir in the canned beans, mixing thoroughly. Continue to cook for an additional 5 minutes to heat through.
Finish and serve
Remove from heat, and top the hash with chopped cilantro and a squeeze of lime juice. Mix and serve warm.
