Make sure to pre-cook the chicken and shred it. Prepare enchilada sauce if you want to make it from scratch.

Prepare the Filling

In a skillet, sauté chopped onion in a bit of oil until translucent. Add shredded chicken and mix well.

Assemble the Enchiladas

Place some chicken filling in a tortilla, sprinkle cheese, and roll it up. Repeat for remaining tortillas.

Bake the Enchiladas

Place rolled enchiladas in a baking dish. Pour enchilada sauce over them and sprinkle with any leftover cheese.

Bake in the oven at 180°C (350°F) for 20 minutes. Serve hot and garnish with fresh tomatoes.
