Spicy Chicken Curry

Have all your ingredients prepped and measured. Cut the chicken into bite-sized pieces and chop onion and garlic.

Sauté chicken and aromatics




In a heavy pot, heat some oil over medium heat. Add the chopped onions and garlic, cooking until fragrant. Add the chicken and sear until lightly browned.
Simmer with coconut milk

Add chopped tomatoes and coconut milk. Stir to combine, reduce heat to low, and let simmer for about 30 minutes.
Garnish and serve

Once cooked through, garnish with fresh cilantro and adjust seasoning as needed. Serve warm with rice.
