Ginger Garlic Barley Stir-Fry
Prepare barley according to package instructions; wash and chop all vegetables before starting the stir-fry.

Prepare the Barley
Start by cooking the barley in a pot with water or broth according to package instructions until tender, then drain and set aside.
Sauté Aromatics
In a pan, heat sunflower oil over medium heat. Add minced ginger and garlic, sautéing for about 1-2 minutes until fragrant.
Cook Vegetables
Add diced onion and carrot to the pan. Stir-fry for about 5-7 minutes until they are tender and slightly caramelized.
Combine and Finish
Add the cooked barley to the vegetable mixture. Pour in the soy sauce, stirring everything together until well combined and heated through, about 3-4 minutes.
