Classic Spaghetti Carbonara

Prepare your ingredients and have a large pot of salted water ready for cooking the pasta.

Cook the Pasta

Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions.

Prepare the Sauce

In a bowl, whisk together the eggs and grated Parmesan until well combined.

Combine and Serve

Drain the pasta, reserving some cooking water. Quickly mix the hot pasta with the pancetta and then with the egg mixture, adding a little reserved pasta water for creaminess. Season with black pepper.

Serve hot with additional Parmesan cheese on top and freshly cracked black pepper. Leftovers can be stored in the fridge for up to 2 days; just reheat gently to avoid curdling the sauce.
