Chicken Enchiladas
Gather all ingredients and preheat the oven to 180°C (350°F).
Ingredients:
Cook the Chicken
Boil the chicken breast in water for about 20-25 minutes until fully cooked, then shred it.
Prepare the Tortillas
Warm the tortillas in a pan for about a minute on each side to make them pliable.
Assemble the Enchiladas
Fill each tortilla with shredded chicken and chopped tomatoes, roll it up, and place in a baking dish. Top with cheese and oregano.
Bake the Enchiladas
Pour a bit of water into the bottom of the baking dish, cover with foil, and bake for about 20 minutes.
Enjoy!
Serve warm topped with additional cheese and a side of guacamole or salsa. Store leftovers in an airtight container in the fridge for 2-3 days.
