Cauliflower and Blueberry Salad

Gather all ingredients. Wash and dry the cauliflower and blueberries. Prepare a cutting board and knife for chopping.
Ingredients:
Prepare the Cauliflower
Wash and chop the cauliflower into bite-sized florets. Steam the florets for 5 minutes until slightly tender but still crunchy, then let cool.
Chop the Cilantro
Wash and chop the cilantro finely. Set aside for later use in the salad.
Prepare the Dressing
Juice half a lemon and mix it with the blueberries in a bowl. Add olive oil, salt, and pepper. Stir to combine.
Assemble the Salad
In a large bowl, combine the cooled cauliflower with the blueberry dressing and cilantro. Toss everything together gently.
Enjoy!
Serve chilled and garnish with extra cilantro on top. Pair with grilled chicken for added protein, and store leftovers in an airtight container in the refrigerator for up to 2 days.
