Eggplant Parmesan Bake

Preheat your oven to 180°C (350°F). Slice eggplants and let them sit with salt for 30 minutes to remove excess moisture.

Prepare Eggplant


Brush sliced eggplant with olive oil and roast in the oven for 20 minutes until brown.
Layer Tomato and Cheese

In a baking dish, layer roasted eggplant, diced tomatoes, and cheese. Repeat the layers until ingredients are used.
Bake the Dish


Cover the baking dish with foil and bake for 30 minutes. Remove the foil for the last 10 minutes to brown the cheese.
Enjoy!
