Grilled Vegetable and Bean Skewers
Gather all ingredients and preheat your grill to medium-high heat. Cut vegetables into even pieces for skewering.
Ingredients:
Prepare the vegetables
Cut zucchini, bell pepper, and eggplant into 1-inch cubes and thread them onto skewers.
Add beans to skewers
Rinse canned beans and add them to the skewers, interspersing with the vegetables.
Season and grill
Drizzle olive oil and minced garlic over the skewers. Season with salt and pepper. Grill skewers for about 10-15 minutes, turning occasionally until veggies are tender and have grill marks.
Enjoy!
Serve warm off the grill, garnished with fresh parsley if desired. These skewers can be stored in an airtight container in the fridge for up to 3 days. Pair them with a side salad for a complete meal!
