Coconut Cauliflower Rice Bowl

Gather all ingredients and prepare your workspace. Chop the cauliflower into florets and mince the garlic beforehand.
Ingredients:

Prepare Cauliflower

Wash and chop the cauliflower into small pieces to create 'rice'. This will take roughly 3 minutes to clean and chop the cauliflower into rice-sized pieces. Allow 30 seconds for washing, and 3 minutes for chopping. Total time for step: 210 seconds.
Cook the Rice Mix

In a saucepan over medium heat, add the coconut milk and minced garlic. Stir and bring to a gentle simmer. Add the cauliflower rice and cook for about 8 minutes until the cauliflower is tender. Allow 1.5 minutes for mixing and 2 minutes for carrying to the stove. Total time for step: 570 seconds.
Garnish and Serve
Remove the cauliflower rice mix from heat, and mix in freshly chopped cilantro and lime juice. This helps enhance the flavors. Take about 2 minutes for mixing and an additional 1 minute for plating. Total time for step: 180 seconds.
Enjoy!
Serve the Coconut Cauliflower Rice Bowl warm, garnished with fresh cilantro and a squeeze of lime. Pair with grilled chicken or shrimp for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
