Savory Breakfast Hash
Gather all ingredients and prepare your workspace. Dice the potato, onion, and bell pepper. Cook the bacon until crispy.
Ingredients:
Cook the Bacon and Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and add the diced onion and bell pepper to the skillet. Sauté until softened.
Add the Potatoes
Add the diced potatoes to the skillet, stirring well. Cover and cook for about 10-15 minutes, stirring occasionally until the potatoes are tender and browned.
Fry the Eggs and Add Spinach
In a separate pan, fry the eggs sunny-side-up. Stir the spinach into the hash until wilted, then season with salt and pepper. Serve the hash topped with the fried eggs.
Enjoy!
Serve the hash warm, topped with a fried egg and a sprinkle of fresh herbs like parsley. Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in a skillet for best results.
