Creamy Mushroom Risotto
Prepare your broth in advance and keep it warm; chop onions and garlic, as well as slice the mushrooms before starting.
Ingredients:
Sauté Vegetables
In a large pot, melt some butter over medium heat. Add chopped onions, garlic, and mushrooms to the pot. Sauté until soft and fragrant.
Cook the Rice
Stir in the Arborio rice, allowing it to toast slightly for 1-2 minutes. Gradually add warm broth, stirring frequently until absorbed.
Finish with Parmesan
Once the rice is creamy and al dente, stir in more butter and grated Parmesan cheese. Mix well until creamy and serve immediately.

Serve the risotto hot, garnished with additional Parmesan and parsley for color. It pairs beautifully with a crisp white wine. Enjoy leftovers by reheating gently on the stove, adding a splash of broth if needed.
