Banana Coconut Cream Pie
Ensure all ingredients are at room temperature. Preheat your oven to 350°F (175°C) if making a pie crust from scratch.

Prepare the crust
In a mixing bowl, combine melted butter, sugar, and vanilla. Add coconut milk and mix well. If using a pie crust, pour the mixture in, otherwise, pour this directly into the baking dish.
Bake the pie
Using the prepared crust, bake in a preheated oven for 20 minutes, until the edges are set. Allow it to cool completely.
Add banana filling
Slice the bananas and layer them on the cooled pie crust. If desired, you can mash some bananas and mix them into the coconut mixture before pouring.
Whip the topping
In a separate bowl, beat the whipping cream until soft peaks form. Spread the whipped cream over the bananas evenly. Chill the pie for at least 2 hours before serving.

Serve chilled topped with dollops of whipped cream and banana slices. Leftovers can be stored in the fridge for 2-3 days in an airtight container. Consider garnishing with toasted coconut flakes for added texture.
