Italian Chicken and Vegetable Bake
Preheat your oven to 200°C (400°F) and gather all ingredients.

Chop the broccoli and bell pepper into bite-sized pieces. In a baking dish, combine the chicken breast, chopped broccoli, and bell pepper. Drizzle with olive oil and toss to coat.
Season and Add Garlic
Mince the garlic and mix it into the vegetables. Season with salt, pepper, and oregano. Make sure all ingredients are well-coated with the seasoning.
Bake and Finish with Cheese
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through. In the last 5 minutes of baking, sprinkle the Parmesan cheese on top and return to the oven until melted.

Serve warm, garnished with fresh parsley and extra Parmesan if desired. Store any leftovers in an airtight container in the fridge for up to 3 days.
