Stir-fried Bok Choy and Chickpeas with Garlic

Gather all ingredients, ideally, wash all vegetables. Prepare a large skillet or wok for stir-frying. Rinse the chickpeas if using canned.

Wash and chop the bok choy into bite-sized pieces and mince the garlic. Rinse the chickpeas under cold water if canned.
Stir-fry the Garlic and Bok Choy


Heat a skillet over medium-high heat with a splash of oil. Add minced garlic and sauté for 30 seconds until fragrant. Then add bok choy and stir-fry for about 2 minutes.
Add the Chickpeas and Season
Add the chickpeas to the skillet and stir to combine. Season with salt and pepper to taste, and cook for an additional 2-3 minutes until everything is heated through.
Finishing Touches and Serve
Once cooked, remove from heat and serve immediately. You may sprinkle with additional salt or lime juice as desired.
