Hearty Chicken Soup
Gather all ingredients and chop vegetables into small pieces for even cooking. Have broth ready.
Ingredients:
Sautéing the Base
In a large pot, heat a little olive oil over medium heat. Add chopped carrots and celery, sautéing until tender, about 5 minutes.
Adding Chicken and Broth
Add the chicken breast and pour in the broth. Bring to a boil and then reduce the heat, simmering for 30 minutes.
Finishing Touches
Remove the chicken, shred it, and return it to the pot. Stir in chopped parsley and season with salt and pepper. Let it sit for 10 minutes.
