Creamy Mushroom Soup

Prepare the mushrooms and onion by chopping them finely. Have broth ready for blending.

In a large pot, melt the butter over medium heat. Add chopped onions and mushrooms, cooking until soft, about 7 minutes.

Adding Broth

Pour in the broth and bring to a boil. Reduce heat and let it simmer for 15 minutes.

Blending and Creaming

Using an immersion blender, puree the soup until smooth. Stir in cream and cook for an additional 5 minutes.

Serve in bowls, with a drizzle of cream on top. It pairs well with crusty bread. Best enjoyed fresh, but can be stored in the fridge for up to 3 days.
