Chicken Enchiladas
Begin by preheating the oven to 180°C (350°F). Prepare the ingredients by chopping the onions and cooking the chicken breast until fully cooked.

Cook the Chicken
Heat olive oil in a pan over medium heat. Add chopped onion and cook until translucent. Add the chicken breast, season, and cook it through, then shred the chicken.
Assemble the Enchiladas
On each tortilla, place a portion of shredded chicken and cheese. Roll them up and place seam-side down in a baking dish. Top with chopped tomato and chili pepper.
Bake
Cover the baking dish with foil and bake in the preheated oven for about 20-25 minutes until everything is heated through.

Serve the enchiladas hot, garnished with fresh cilantro or sour cream. Leftovers can be stored in an airtight container for up to 3 days. Ideal paired with a side salad or guacamole.
