Spicy Lentil Soup
Rinse lentils and prepare all vegetables by chopping them. Have canned beans ready for use.
Ingredients:
Sautéing the Base
In a pot, heat olive oil over medium heat. Add chopped onion, garlic, and carrot, cooking until soft, about 5-6 minutes.
Cooking the Lentils
Stir in lentils and canned beans. Add water to cover and bring to a boil. Reduce heat to simmer for 20-25 minutes.
Final Seasoning
Season with salt, pepper, and spices of choice. Cook for an additional 10 minutes until lentils are tender.
Enjoy!
Garnish with a sprig of fresh cilantro or parsley. Serve with whole grain bread for a nutritious meal. It stores well in the fridge for 5 days, perfect for meal prep.
