Savory Vegetable Breakfast Hash
Gather all the ingredients and prepare your cooking equipment. Dice the potato, bell pepper, and onion. Rinse the spinach and parsley.

Sauté the base ingredients
In a large pan, heat the olive oil over medium heat. Add the diced potato, bell pepper, and onion. Cook for about 10 minutes or until the potatoes are tender and lightly browned.
Add greens and mushrooms
Stir in the mushrooms and spinach. Cook for an additional 5 minutes, stirring occasionally, until the mushrooms are softened and the spinach is wilted.
Cook the egg
Make a small well in the middle of the vegetable mixture and crack the egg into the well. Cover the pan and cook for 3-4 minutes or until the egg is cooked to your liking.
Garnish and serve
Once the egg is cooked, remove from heat and sprinkle chopped parsley over the top. Serve immediately.
