Italian Chicken Piccata

Pound the chicken breasts to an even thickness to ensure even cooking. Have all your ingredients ready before starting to cook.
Ingredients:




Sear Chicken


Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, then cook until golden brown on both sides. Remove and set aside.
Create Lemon Sauce


In the same skillet, add lemon juice and a bit of water, scraping any bits stuck to the pan. Bring to a simmer.
Finish with Butter and Capers

Lower the heat and stir in butter and capers. Return the chicken to the skillet and cook for an additional 5 minutes, spooning the sauce over the chicken.
Enjoy!
Serve over pasta or rice and pour the sauce over the top. Fresh parsley can be used as a garnish. Leftovers can be refrigerated for up to 3 days.
