Chop the potatoes and leeks before you start cooking.

Cook the Veggies

In a large pot, sauté the chopped leeks in butter until soft.

Add diced potatoes and vegetable broth, bringing the mixture to a boil.

Reduce heat and let it simmer for about 30 minutes until the potatoes are tender.
