Quick Chickpea and Cabbage Salad
Gather your ingredients and chop the cabbage into thin strips. Rinse and drain the chickpeas.
Ingredients:
Prepare the Cabbage
Thinly slice the cabbage and place it into a large mixing bowl. This will form the base of your salad.
Add the Chickpeas
In the mixing bowl with the cabbage, add the drained chickpeas. Gently toss together to combine.
Dress the Salad
Squeeze the juice of one lemon over the salad and drizzle with olive oil. Toss everything gently to coat the ingredients.
Add Flavor with Garlic
Finely mince the garlic and add it to the salad. Mix well to distribute the garlic flavor throughout the dish.
Garnish with Cilantro
Chop the cilantro and sprinkle it over the salad. Give it a final toss and it's ready to serve!
Enjoy!
Serve the salad chilled, garnished with additional cilantro if desired. This salad can be stored in an airtight container in the refrigerator for up to 3 days. Enjoy it with pita bread or on its own!
