Blueberry and Coconut Chia Pudding
Gather all ingredients and ensure you have a bowl to mix the pudding and a container to chill it in the fridge!
Ingredients:
Combine Ingredients
In a bowl, mix the coconut milk and chia seeds together until well combined. Let this mixture sit for about 5 minutes to allow the chia seeds to absorb the liquid.
Add Sweetness and Flavor
After the chia seeds have swelled, add honey and blueberries to the mix. Stir gently to incorporate the honey and distribute the blueberries evenly.
Chill the Pudding
Transfer the chia pudding mixture into a container and refrigerate for at least 2-4 hours or overnight for it to thicken properly.
Enjoy!
Serve chilled, topped with extra blueberries and a sprinkle of chia seeds for garnish. This pudding keeps well in the fridge for up to 3 days. Enjoy it as a healthy breakfast or snack!
