Gather all ingredients and tools; chop cauliflower and onion, mince garlic, and rinse chickpeas. Have your wok or large pan ready.

In a wok or large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic, sautéing until fragrant and translucent. Then, add cauliflower florets and stir-fry until they start to soften, about 5-7 minutes.
Add Chickpeas and Spinach



Stir in the chickpeas and cook for an additional 5 minutes. Add the spinach, stirring until it wilts, and season with salt and pepper to taste. Serve immediately.
