Chinese Chicken and Bok Choy Stir-Fry
Gather all the ingredients, chop the chicken into bite-sized pieces, slice the bok choy, mince the garlic and ginger, and have soy sauce ready to use.

Prepare the chicken and aromatics
Heat sunflower oil in a large pan over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant. Then, add the chicken breast pieces, and cook until the chicken is browned and cooked through, about 5-7 minutes.
Stir-fry the bok choy
Add the bok choy to the pan with the chicken. Stir-fry for another 3-4 minutes until the bok choy is tender but still crisp.
Add soy sauce and finish
Pour the soy sauce over the chicken and bok choy mixture. Stir everything together for another minute to combine flavors before removing from heat.
Enjoy!
Serve hot with steamed rice or noodles. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Garnish with sesame seeds or sliced green onions for extra flavor!
