Spicy Chickpea Stir-Fry
Gather all your ingredients and chop the bell pepper and chili pepper. Rinse and drain the chickpeas.
Ingredients:
Sauté the Chickpeas
In a pan over medium heat, add olive oil and then the chickpeas. Sauté for about 5-7 minutes until they start to turn golden.
Add Vegetables
Add minced garlic and chopped bell pepper to the pan. Cook for an additional 5 minutes until the vegetables soften.
Incorporate Spinach
Stir in the spinach and cook until wilted, about 2-3 minutes.
Spice it Up
Add chopped chili pepper and soy sauce. Stir well to combine and cook for another 2 minutes to mix flavors.

Serve your Spicy Chickpea Stir-Fry hot, garnished with fresh cilantro or green onions. Great with rice or quinoa. Store leftovers in an airtight container in the fridge for up to 3 days.
