Sweet Spiced Bean and Barley Stir-Fry
Prepare your ingredients by chopping the onion, carrot, and garlic. Rinse the barley under cold water. Have all your ingredients ready before starting to cook.

Sauté the aromatics
In a pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped onion and cook until translucent, about 3-4 minutes.
Prepare the vegetables and barley
Add the diced carrot and rinsed barley to the pan. Stir to combine and cook for another 3-4 minutes. Then, add enough water or broth to cover the mixture and bring to a boil. Reduce heat and simmer for 20-25 minutes until the barley is tender.
Add beans and spices
Once the barley is cooked, drain and rinse the canned beans, then add them to the pan. Sprinkle in the honey and cinnamon, stirring well to combine everything. Cook for an additional 5 minutes to heat through.

Serve the stir-fry warm, garnished with fresh herbs if desired. It pairs well with a dollop of yogurt or a side of leafy greens. Store leftovers in an airtight container in the fridge for up to 3 days.
