Cook the Pasta and Bacon

Boil water in a large pot. Add pasta and cook according to package instructions. In a pan, cook the bacon until crispy, then add minced garlic.

Prepare the Sauce

Egg
2 grams

In a bowl, whisk together the eggs and cheese. Once the pasta is cooked, reserve some water and drain the rest. Combine hot pasta with the egg mixture, using reserved pasta water to help emulsify.

Serve hot with extra cheese on top and a sprinkle of black pepper. This dish is best enjoyed fresh but can be stored in the fridge for up to two days.
