Stuffed Bell Peppers
Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds, setting them aside for stuffing.

Prep the Peppers
Slice the tops off the bell peppers, discard seeds, and set them upright in a baking dish.
Cook the Filling
In a skillet, sauté onion and garlic until fragrant. Add ground beef, mixing well until browned, then incorporate cooked rice and chopped tomatoes.
Stuff and Bake
Fill each pepper with the beef and rice mixture. Cover with foil and bake for 30 minutes, removing the foil for the last 10 minutes.
Serve Hot
Allow to cool slightly before serving warm. Enjoy the peppers straight from the oven!
