Cauliflower and Chickpea Stir-fry
Prepare your ingredients by chopping the cauliflower into florets, rinsing the chickpeas, and mincing the garlic. Gather all other ingredients before you start cooking.

Sauté Cauliflower
In a large skillet, heat the olive oil over medium heat. Add the chopped cauliflower and sauté for about 5-7 minutes until it starts to soften and turn golden.
Add Chickpeas and Garlic
Stir in the rinsed chickpeas and minced garlic, cooking for an additional 3-5 minutes until the garlic is fragrant and the chickpeas are heated through.
Finish with Cilantro and Lemon
Remove the skillet from heat and toss in the chopped cilantro and a squeeze of lemon juice to brighten the flavors before serving.
